Paulino pork loin is a premium quality sausage and the star product of Paulino sausages.

Originally from the pastures of the Sierra de Aracena, in Huelva, where 100% Iberian pigs live and grow in freedom, eating grass and natural acorns in the open air. The result is a 100% Ibérico de Bellota product of the highest quality and natural flavour.

The loin is carefully trimmed to remove excess fat and seasoned with a mixture of salt, garlic and spices. Once seasoned, it is left to marinate for a while to allow the flavours to penetrate the meat. Once marinated, the loin is air-dried and cured for several months. During this curing process, the meat loses moisture and develops its characteristic rich flavour and tender texture. The final product is a firm, dense meat, with an intense red colour and a marbled appearance.

Lomo Paulino is appreciated for its intense flavour, delicate texture and complex aroma. It is usually served in thin slices as part of a charcuterie board or as a gourmet appetizer.
