Morcilla Paulino is a special type of sausage and a traditional and popular component of Spanish cuisine. It comes from 100% Iberian pigs raised in the Sierra de Aracena, in Huelva, in the open air and with a diet based on grass and acorns, which makes it a 100% Iberian acorn-fed product.

Morcilla is made mainly with pig’s blood, mixed with various ingredients such as rice, onions, spices and sometimes fat, which give it its characteristic flavor and texture.

Once the ingredients are mixed, the mixture is stuffed into a casing made of natural materials, and then smoked. The cooking process consists of simmering or frying the sausage until it is fully cooked.

It is usually eaten as part of a tapas dish, served sliced and grilled, or used as an ingredient in various Spanish dishes, such as stews, soups and rice dishes.

Morcilla Paulino is prized for its unique flavor and versatility in Spanish cuisine, and is a prized delicacy among those who enjoy exploring the diverse flavors of traditional Spanish charcuterie.
